Buy first class Taggiasca extra virgin olive oil directly from the olive farm. This olive oil comes from the Maritime Alps just north of Imperia, the place is called Lucinasco. Here the Ansaldi family has about 10,000 olive trees, about 550 meters above sea level. Olio Ansaldi extra virgin olive oil has been organically grown and processed for decades. But the Ansaldi family has so far spared the effort to have their olive oil certified organic. That is why it does not have an organic seal.
The olives are harvested and sorted by hand. The pressing is carried out cold on a special press that processes only pure organic olives. This extra virgin olive oil is exclusively from the Ansaldi family farm in Lucinasco. It is not mixed with other oils.

First class Taggiasca extra virgin olive oil. The olive oil is pressed cold (below 27 degrees). For this purpose, we have a partner who only presses organic olives, so that no conventional olives can really be added. The organic olive oil is harvested in October. We then bottle it in December/January.
